Description
This is a lovely mixture of torn Serrano ham, sun dried tomatoes, fresh spinach, red onion and garlic in a delicate creamy cheese sauce within tiny pinch of chili flakes. It also made perfect leftovers for lunch the next day.
Ingredients
- 200 grams Gluten-free Pasta
- Oil, As Needed
- 2 cloves Garlic, Minced
- 1 pinch Chili Flakes
- 1 whole Red Onion, Diced
- 2 Tablespoons Sun Dried Tomatoes
- 1 bunch Spinach
- 4 slices Serrano Ham, Torn
- 200 milliliters Dairy Free Cream
- Salt And Pepper, to taste
- 2 Tablespoons Dairy Free Cheese, Grated
- 1 teaspoon Basil
Preparation
Cook gluten-free pasta according to instructions on packet.
Heat a drizzle of olive oil in a large shallow pan. Stir in garlic, chili flakes, red onion and tomatoes. Sauté for 5 minutes.
Add spinach and serrano ham. Pour in cream and simmer for a couple of minutes. Season with salt and pepper.
Stir in grated cheese and basil. Cook for another minute. Stir in cooked pasta and serve immediately.
