Ingredients

  • 1 cup Gluten-free Bread Crumbs
  • ¼ teaspoons Paprika
  • ¼ teaspoons Garlic Powder
  • ½ teaspoons Salt
  • ¼ teaspoons Ground Pepper
  • 1 cup Gluten Free Flour
  • 2 whole Eggs
  • 1 pound Pollock, Or Other White Fish
  • 1 cup Cooking Oil, Or As Needed For Frying

Preparation

Combine bread crumbs, paprika, garlic powder, salt and pepper and place on a plate.

Place gluten-free flour on a separate plate. Beat eggs in a shallow bowl.

Cut pollock into strips 1/2 inch wide. Dredge first in flour, then egg, then seasoned breadcrumbs.

Heat oil in a heavy skillet. Working in batches to avoid overcrowding the pan, carefully place fish pieces in hot oil. Cook 1–2 minutes, flip and cook 1–2 minutes more.

Remove fish from skillet and drain any excess oil.
