Growing up in our house we call em Hootenanny’s but I have been educated that the “proper” name for this tummy pleasing dish is the German Pancake. It was always made when my cousins came to sleep over. Now that I cannot have gluten I have de-glutified my mom’s recipe. Enjoy!
Ingredients
- ¼ cups Butter
- 1 cup Milk
- 6 whole Eggs
- ¼ teaspoons Salt
- ¾ cups Brown Rice Flour
- ¾ cups Sweet Rice Flour
- ¼ cups Potato Starch
Preparation
Preheat oven to 350F.
While oven is preheating, put butter in a 9×13″ glass baking pan and place in the oven (butter will melt nicely while you are preparing the remaining ingredients).
In a large blender, blend milk, eggs, salt, brown rice flour, sweet rice flour, and potato starch until batter is smooth. Remove the glass pan (don’t forget the oven mitts) and with a pastry brush, grease the sides of the pan with the melted butter. Next, pour batter directly on top of melted butter. Place back in oven on the middle rack and bake for 45 minutes.
