Goat Cheese Hushpuppies

Description

Crispy golden brown bites of goodness filled with oozy goat cheese!

Ingredients

  • ½ cups Cornmeal
  • 1-¼ cup Flour
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • 1 teaspoon Salt
  • 2 teaspoons Rosemary (minced)
  • ½ teaspoons Red Pepper Flakes
  • 1 teaspoon Smoked Paprika
  • 1  Egg
  • ½ cups Buttermilk
  • 5 Tablespoons Chives, Minced
  • 6 ounces, weight Goat Cheese
  • 4 ounces, weight Cream Cheese
  • ½  Red Chili (or Jalapeno), Minced
  • Vegetable Oil, For Frying
  • 1 teaspoon Salt, For Sprinkling On The Finished Product

Preparation

1. In a large bowl, combine the dry ingredients (cornmeal through paprika on the above list) with a whisk.
2. In a small bowl, beat together an egg and the buttermilk until smooth.
3. Whisk the wet ingredients into the dry ingredients. Set aside.
4. In a separate bowl combine the rest of the ingredients (chives through the jalapeno on the above list) until you have a soft cheese mixture.
5. Beat the cheese mixture into the cornmeal batter until well combined.
6. Bring a large heavy pot of oil up to 350 F.
7. Using a 1 ½ inch scoop, scoop and gently drop the batter into the hot oil. (Only do a few at a time, so they don’t lower the oil temperature.) Fry the batter for about 3 minutes until they are fluffy and golden.
8. Transfer the cooked ones to a sheet pan that you’ve lined with paper towels and immediately sprinkle with kosher salt. Repeat with the remaining batter.
9. The outside should be crispy and golden brown and the very inside should still be a little molten goat cheesy.
