Description
This is the way my grandmother used to make scrambled eggs for me; the only thing I’ve added is the salsa. This recipe is so simple, yet so satisfying! Enjoy!
Ingredients
- 2 whole Eggs Or 1/2 Cup Of Egg Beaters Egg Substitute
- 1 Tablespoon Low Fat Milk
- Salt And Pepper, to taste
- 1 teaspoon Butter
- 1 Tablespoon Cream Cheese
- 2 Tablespoons Fresh Salsa
Preparation
Heat a small skillet on low heat.
In a small bowl, beat the eggs and milk. Add salt and pepper to taste.
Turn the heat to medium and add the butter to the pan, turning the pan to coat. Add the eggs and cream cheese. Stir the eggs as they cook. Keep stirring until the eggs are cooked and the cream cheese is melted throughout. You may need to adjust the heat lower so that the eggs don’t brown.
Once plated, top with your favorite salsa and enjoy!
Note: You can substitute reduced fat cream cheese for the regular, or skim milk for the low-fat.
