These granola cookies allow you to indulge in eating pleasures without feeling guilty at all. Meaning you can totally take these cookies to another awesome level: granola ice cream sandwiches!
Ingredients
- 1 cup All-purpose Flour
- 1 teaspoon Baking Powder
- ½ teaspoons Baking Soda
- 1 teaspoon Salt
- 1 stick Unsalted Butter, Softened
- ½ cups Granulated Sugar
- ½ cups Brown Sugar
- 1 whole Large Egg, Room Temperature
- 1 teaspoon Vanilla Extract
- 1-½ cup Granola
Preparation
Preheat oven to 350ºF. Line two baking sheets with parchment paper.
In a bowl, sift flour, baking powder, baking soda and salt.
In a standing mixer fitted with the paddle attachment, cream butter and both sugars until light and fluffy, about 5 minutes. Beat in egg until thoroughly incorporated. Mix in vanilla until well combined.
On low speed, add flour mixture until just combined. Fold in granola by hand.
Form the dough into tablespoon-sized balls place onto the prepared baking sheets. Leave 1 inch in between cookies.
Bake for 13 to 15 minutes until edges are slightly brown. Transfer to wire rack and cool completely.
