Description
These pancakes take a basic batter and give it a boost. We occassionally have Breakfast for Dinner (B4D on the menu) and this is what I made the other night. My new favorite way to make them!
Ingredients
- 2 whole Eggs
- 2-¼ cups Milk
- ¼ cups Vegetable Oil
- 2 Tablespoons Sugar
- 1 teaspoon Vanilla
- 1 teaspoon Salt
- 2 Tablespoons Baking Powder
- 2 cups All-purpose Flour
- ½ cups Granola
- ¼ cups Chopped Pecans
Preparation
In a mixing bowl, combine eggs, milk, oil and sugar. Mix in vanilla, salt and baking powder. Mix in flour until smooth. Stir in granola and pecans.
Heat a skillet or griddle over medium heat, spray with oil or cooking spray. Pour batter by ¼ cup and cook until pancake batter is dry around the edges, and bubbling on top, about two minutes, turn over and cook the other side, about 2 more minutes. Keep the completed pancakes warm, and repeat with remaining batter.
Serve with butter, syrup, or any other favorite topping.
