Description
Nothing says brunch better to me than this breakfast quiche. Family gatherings, holidays or just because I’m craving it, this quiche is a hit.
Ingredients
- 10 whole Eggs
- ½ cups Flour
- 1 teaspoon Baking Powder
- ½ teaspoons Salt
- 16 ounces, weight Cottage Cheese
- 1 pound Monterey Jack Cheese, Shredded
- 2 cans Diced Green Chiles, 4 Oz Size Cans
Preparation
Beat the eggs until light yellow and frothy. Add dry ingredients and combine thoroughly. Add cottage cheese, shredded monterrey jack cheese and green chiles and stir until combined.
Pour into a greased 9 x 13 pan and bake at 350 degrees (F) for approximately 35 minutes, or until light brown and firm.
If you like, top with additional shredded cheese of your choice 5 minutes before done baking.
