    Ingredients

    • 2-½ cups Old Fashioned Oats
    • ½ cups Brown Sugar
    • 1 teaspoon Baking Soda
    • 1 teaspoon Salt
    • 1 teaspoon Cocoa
    • 2 cups Spinach
    • ¼ cups Almond Milk
    • 1 Tablespoon Peanut Butter
    • 1 whole Banana, Mashed
    • 1 cup Unsweetened Applesauce
    • 1 teaspoon Vanilla
    • 1 whole Egg
    • ⅓ cups Egg Whites

    Preparation

    Preheat oven to 350ºF.

    In a large bowl combine all dry ingredients. Stir together.

    Meanwhile, add spinach, almond milk, and peanut butter into a food processor. Pulse until everything is combined and smooth.

    Add spinach mixture into dry ingredients. Add remaining ingredients and stir together.

    Spoon batter into a greased muffin tin. Bake for 25 minutes.

    Yields 12 muffins.
