Grilled Nectarines with Cheese

Description

I made these when I was kitchen staff at a summer camp in Algonquin Park. On the night the kids left, we catered a big barbecue where we served (among other dishes), cold beer, fresh lobsters and these delicious grilled nectarines.

Ingredients

  • 8 whole Slightly Underripe Freestone Nectarines
  • ¼ cups Shredded Or Diced Sharp Aged Cheese That Melts Well (old Cheddar, Dubliner, Comte)

Preparation

1. Preheat your broiler or barbecue grill.
2. Halve the nectarines and take out the stone. Put them on a tray, cut side facing up.
3. Place some cheese in the centre of each nectarine.
4. Broil or grill for 10 minutes or until cheese is melted and nectarines are nice and juicy.
