Description
Sweet and savory grilled cheese sandwich. A great way to use Thanksgiving leftovers!
Ingredients
- 2 whole Sweet Potatoes, Peeled And Sliced Into 1/4 Inch Rounds
- 1 Tablespoon Olive Oil
- 8 slices Artisan-style Bread
- 4 Tablespoons Unsalted Butter
- 2 Tablespoons Honey
- ½ cups Fresh Spinach Leaves
- ½ cups Blue Cheese, Crumbled
Preparation
Preheat oven to 350ºF.
Peel and slice sweet potatoes and place in medium bowl. Drizzle with olive oil and toss to coat. Place on 9×13 cookie sheet and bake for 15 minutes. The sweet potatoes should be softened.
Meanwhile, butter one side of each slice of bread.
For each sandwich, place buttered side facing down on surface. Drizzle 1/2 teaspoon honey onto one side of bread. Top with one layer of spinach leaves, 2 to 3 rounds of sweet potato, and crumbled blue cheese. Top with bread.
Place 12-inch cast iron skillet or nonstick skillet on stovetop and heat on medium-low until a drop of water sizzles. Place sandwich in skillet and grill for approximately 1 minute. Carefully flip sandwich and grill until golden brown and crispy. Slice and serve.
