Description
Simple and tasty Peruvian style ceviche with sweet potatoes and purple okra.
Ingredients
- 6 ounces, weight Grouper (or Other White Meaty Fish)
- 1 teaspoon Kosher Salt
- 1 teaspoon Black Pepper
- 2 cloves Garlic, Diced
- 2 teaspoons Diced Jalapenos
- 2 whole Lemons, Juiced
- 1 Tablespoon Finely Chopped Fresh Cilantro
- 3 whole Ice Cubes
- 1 whole Red Onion, Small Diced
- 4 whole Okra, Sliced Crosswise
- ½ whole Sweet Potato (peeled, Boiled, And Cut Into 1/4 Inch Slices)
- 1 whole Avocado, diced
Preparation
Place fish in a bowl and season with salt and pepper. After a minute, add garlic and jalapeño. Mix well.
Pour lemon juice over the fish and add cilantro and ice cubes. Stir and let stand for about a minute.
Add red onions and okra slices and remove the ice cubes. Mix well and adjust seasoning for taste. Let sit for 10–15 minutes.
Serve with sweet potatoes and avocados.
