Description

Super easy and delicious guacamole brightened with lots of fresh lime and grape tomatoes and a hint of spicy smoky chipotle.

Ingredients

  • 2 whole Avocado
  • ¼ cups Cilantro, Chopped
  • 1 whole Shallot, Minced
  • 3 stalks Green Onion, Chopped
  • 1 clove Garlic, Minced
  • 1 whole Lime, Juiced
  • 1 Tablespoon Olive Oil
  • ½ teaspoons Salt
  • ½ teaspoons Pepper
  • 1 teaspoon Chipotle Chili Flakes
  • 1-½ teaspoon Cumin
  • 1 teaspoon Coriander
  • 8  Grape Tomatoes, Roughly Chopped

Preparation

In a bowl, combine all ingredients, except grape tomatoes (and reserve a couple leaves of cilantro for garnish). Gently mash with a potato masher. Stir in grape tomatoes.

Place mixture into a fresh bowl and garnish with reserved cilantro. Serve immediately with your favourite chips!

Notes:
1. You can use 1/8 cup of minced red onion instead of the shallot.
2. You can use regular chili flakes or 1 teaspoon Tabasco (or your favorite hot sauce) instead of the chipotle pepper flakes—it just won’t have that smoky undertone.
3. If you are not a fan of cilantro, you can omit it.
