Celebrate St. Patty’s with a serving of this Guinness Mac & Cheese!
Ingredients
- 1-¼ cup Elbow Macaroni
- 2 Tablespoons Olive Oil
- ½ pounds Ground Beef
- 1 whole Shallot, Diced
- 2 Tablespoons All-purpose Flour
- 1 cup Guinness Beer
- ⅓ cups Whole Milk
- 1 cup Cheddar Cheese, Shredded, Plus More For Topping
- Salt And Pepper, to taste
- Chopped Chives, For Garnish
Preparation
Bring water to a boil in a large stockpot. Add elbow macaroni and cook according to package directions.
Meanwhile, in a large 10-inch cast iron skillet, add olive oil, ground beef, shallot, salt and pepper. Cook for about 5 minutes or until beef is no longer pink.
Add flour and stir until incorporated, about 1 minute. Stir in beer and bring to a slight boil. Keep stirring until thickened, about 3–4 minutes. Remove skillet from heat and stir in milk and cheese. Add drained pasta to skillet and smooth into an even layer. Season to taste with salt and pepper.
Preheat broiler, sprinkle enough shredded cheese over mac and cheese. Place skillet under broiler for about 5 minutes or until golden brown and bubbly. Remove skillet from broiler, garnish with chopped chives, and serve immediately with a big glass of Guinness.
