Description
Granola loaded with coconut oil, almonds, dried cranberries and chocolate chips!
Ingredients
- 1 cup Almonds, Chopped Or Left Whole
- 3 cups Old Fashioned Oats
- ½ teaspoons Salt
- ¾ cups Dried Cranberries
- ½ cups Semi-Sweet Chocolate Chips
- ⅓ cups Brown Sugar, Packed
- ⅓ cups Honey
- 3 Tablespoons Coconut Oil (I Used Unrefined)
- 1 teaspoon Vanilla Extract
Preparation
Preheat oven to 350ºF.
In a large bowl, mix almonds, oats, salt, cranberries and chocolate chips. Set aside.
In a medium size bowl, mix brown sugar, honey, and coconut oil. Stir in vanilla. Pour wet mixture into bowl with dry ingredients and mix until entire mixture looks wet.
On a baking tray lined with parchment paper, spread the granola in a thin layer. Bake for 5 minutes, then stir the granola around on the tray. Bake for another 5 minutes. Remove from oven and transfer onto wax paper to cool. Sprinkle with a little bit of sea salt if desired.
Once granola is completely cooled, break it up into small clusters. Store in an airtight container.
