Easy, cheesy and delicious in a flaky filo crust!
Ingredients
- FOR THE FILO DOUGH:
- ⅓ cups Butter, Melted
- 1 pound Filo Dough
- FOR THE QUICHE FILLING:
- 2 Tablespoons Butter
- ½ whole Sweet Onion, Finely Diced
- 6 whole Colored Mini Sweet Peppers, Chopped
- 24 ounces, weight Cottage Cheese
- ⅓ cups Parmesan Cheese
- 3 whole Eggs
- 1 teaspoon Black Pepper
- 2 Tablespoons Dried Oregano
- 1 teaspoon Garlic Powder
- 2 cups Ham, Cut Into Bite Sized Pieces
Preparation
Heat oven to 375ºF.
To prepare the filo, melt butter. With a pastry brush, butter a 9×13 baking dish. Layer filo dough sheet by sheet, buttering between each layer. Make sure you fold the filo dough up the sides of the pan.
For the quiche filling, in a medium-sized skillet, melt butter over medium high heat. Add chopped onion and peppers. Cook, stirring occasionally, for about 5 to 7 minutes or until crisp-tender. Set aside.
In a large bowl, combine cottage cheese, Parmesan cheese and eggs. Add pepper, oregano and garlic powder. Add ham and cooked vegetables. Mix well and pour into the filo crust.
Bake in preheated 375ºF oven for about 30–35 minutes or until center is set and toothpick inserted comes out clean. Let stand for 10 minutes before servings. Serve with a green salad.
