Description

Hand Shredded Chicken (Shou Si Ji) is an easy and quick recipe. Because it is shredded, every small piece gets the sauce. So it is very flavorful! You can put the chicken in lettuce and have lettuce wraps. You can wrap it in tortillas, then you get tacos. You can also make sandwiches with some tomato and lettuce. Or you can eat it with rice. Yummy!

Ingredients

  • 1 whole Chicken Breast
  • 1 clove Garlic
  • 1 slice (about 1 Inch Thick) Ginger
  • 1  Green Onion
  • ½ teaspoons Sugar
  • 1 teaspoon Light Soy Sauce
  • 1 dash White Pepper
  • 1 teaspoon Chili Oil
  • 1 teaspoon Olive Oil
  • 1 teaspoon Sesame Oil
  • 1 dash Salt
  • Roasted Sesame Seeds, For Garnish

Preparation

Rinse chicken breast and put it in a saucepan with water.

Make garlic and ginger water for the sauce. Press the garlic clove and ginger, then put the pressed garlic and ginger in a small sauce bowl and add 2 tablespoon water.

Tear the green onions into small pieces with your hands (to match the hand shredded chicken later).

Make the sauce. In a sauce bowl, add sugar, light soy sauce, white pepper, chili oil, olive oil, sesame oil, and 1 tablesooon of the garlic and ginger water. Mix and set aside.

Put the saucepan with chicken breast over medium heat. Bring to a boil, then cook for about 10 minutes. Test with a fork to see if there is juices run clear. If not, continue cooking until juices run clear.

Take chicken breast out and put it in a plate to cool. When cool enough to handle, shred chicken with your hands.

Pour the sauce onto the shredded chicken. Add the torn green onion pieces. Sprinkle some roasted sesame seeds on the top.
