Description
Tastes like a creamy pumpkin milkshake, but it’s dairy-free, sugar-free, vegan and completely healthy!
Ingredients
- 2 cups Fresh Pumpkin, Peeled And Sliced Into Cubes (or Pumpkin Puree)
- 1 Banana, Sliced
- 1 Green Apple, Peeled And Chopped
- 2 Tablespoons Peanut Butter (salt And Sugar Free)
- 11 tablespoons, 7-⅝ pinches (1 Cup) Coconut Milk Or A Dairy Free Milk Of Your Choice (almond, Rice)
- Ground Cinnamon For Dusting (optional)
Preparation
Peel and slice pumpkin into small cubes. Steam until very soft, drain. (Skip if using pumpkin puree.)
Place all ingredients in a blender and blend until silky smooth and creamy. Add a dash of water if you feel it is too thick.
Pour into glasses or jars, dust with a little ground cinnamon and enjoy!
Note: This is the perfect smoothie to take to work, or make in the morning and have as an afternoon snack, as it doesn’t discolour and the flavours only improve.
