Healthy Pecan Pancakes

Description

Whole wheat flours, oats, pecans and flax makes a nice fluffy and tasty pancake for breakfast or brunch you can feel good about!

Makes around 6-8 pancakes depending on how large or small you make them.

Ingredients

  • 1  Egg
  • 1 cup Unsweetened Vanilla Almond Milk
  • 1 Tablespoon Honey
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Date Honey (See Note)
  • ½ cups White Whole Wheat Flour
  • ¼ cups Whole Wheat Flour
  • ¼ cups Old Fashioned Oats
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 Tablespoon Flax Seeds
  • 2 Tablespoons Chopped Pecans

Preparation

Beat the egg in mixing bowl. Add the rest of the ingredients in order listed. Mix throughly but don’t over beat with wooden spoon or mixer.

Ladle around 1/4 to 1/3 cup onto hot greased griddle or skillet. Cook till bubbles form then flip and cook for around 1 minute.

Note: The date honey I made and used in making these pancakes was from Ultimate Daniel Fast. Feel free to make a substitution!
