Healthy Southwestern breakfast tostadas! Perfectly crispy tortillas topped with fresh guacamole, tomato salsa, a peppery fried egg and nutritious hemp seeds. A great way to jump start your day! Vegetarian and gluten-free!
Ingredients
- 2 Yellow Corn Tortillas
- Salt And Pepper
- 2 Medium To Large Eggs
- 1 Avocado
- 1 Lime, Juiced
- 1 teaspoon Garlic Powder
- ¼ cups Tomato Salsa
- 2 Tablespoons Diced Red Bell Pepper
- 1 Tablespoon Diced Red Onion
- 2 Tablespoons Hulled Hemp Seeds
Preparation
Preheat oven to 425ºF.
Place corn tortillas on a baking sheet and spray with cooking spray. Sprinkle with salt and pepper. Bake in the oven (middle rack) for 6 minutes.
Heat a medium skillet to medium-high heat on the stovetop. Crack in the eggs and sprinkle with salt and pepper. Cook until fully cooked through and edges are a bit crispy, about 5 minutes.
Slice avocado and placed the filling into a small bowl. Add lime juice, garlic powder, salt and pepper and mash.
Spread some guacamole onto each crispy tortilla. Add the salsa. Add a fried egg to each, top with the chopped bell peppers, diced red onion and hemp seeds. Enjoy!
