Description
Sometimes it can be difficult to find healthy, tasty comfort foods. I’m happy to say that has been achieved here! These Turkey Stuffed Peppers have wonderful flavor with a little bit of a spicy kick from cayenne pepper.
Ingredients
- 1 pound Ground Turkey
- 5-½ Tablespoons Poultry Seasoning
- 3 cloves Garlic, Minced
- ⅔ cups Sweet Yellow Onion, Minced
- 4 Sweet Mini Peppers Chopped
- 6 ounces, weight Tomato Paste
- ¾ cups Chicken Broth Sodium
- 1 cup Spinach, Finely Chopped
- 1 teaspoon Italian Seasoning
- 1 teaspoon Cayenne Pepper
- 2 cups Brown Rice, Cooked
- Salt And Pepper, to taste
- 6 Bell Peppers (Large)
- ⅓ cups Shredded Reduced Fat Sharp Cheddar Cheese
Preparation
Preheat oven to 350ºF.
In a large saute pan, add ground turkey, poultry seasoning, garlic and onion. Cook over medium heat. Once the turkey is about 3/4 of the way cooked, add mini peppers. Cook for another 5 minutes.
Add tomato paste, chicken broth and spinach. Mix well. Add Italian seasoning and cayenne pepper. Mix. Lastly, mix in cooked brown rice. Add salt and pepper to taste.
Cut the tops off the bell peppers and spoon out the inner seeds. Add the turkey mixture to each pepper, filling to the top. Sprinkle a little cheese on top of each filled pepper.
Bake for 25–30 minutes.
