Homemade Bacon Blue Cheese Tator Tots

Description

Easy to make and delicious, the bacon and blue cheese burst with flavor.

Ingredients

  • 6 strips Bacon
  • 2 whole Large Russet Potatoes, Peeled
  • 2 Tablespoons Flour
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 2 cloves Fresh Garlic, Finely Chopped
  • 10 teaspoons Blue Cheese
  • 1 quart Oil, For Frying

Preparation

Preheat oven to 400ºF.

Cook bacon for 10 minutes until crisp. Let cool and then chop.

Peel potatoes and add to a pot of water. Parboil for 6–7 minutes. Drain, let dry, and cool potatoes before shredding finely with a cheese grater.

Mix flour, salt, pepper, chopped garlic and chopped bacon with the potato mixture. Assemble mixture into large tots and stuff each tot with 1 teaspoon blue cheese.

Heat oil in a fry pot to 350ºF. Fry each tot for 3–4 minutes until golden brown and crispy on the outside.
