Homemade Chicken Sausage

Description

These chicken sausages are a healthy alternative to traditional pork-based sausages and are every bit as delicious!

Ingredients

  • 3 pounds Chicken Thighs
  • ½ cups Roasted Red Bell Peppers
  • 2 Tablespoons Fresh Basil Paste
  • 2 teaspoons Salt
  • 1 teaspoon Black Pepper
  • Collagen Sausage Casings, As Needed

Preparation

Remove bones from chicken thighs and cut meat and skin into 2-inch strips. Combine chicken, peppers, basil, salt and pepper and run the mix through a meat grinder.

Place ground meat mix into the freezer for 15 minutes to chill.

Fry a tablespoon of the meat mixture in a skillet and taste. Adjust seasoning in the batch of sausage if needed.

Stuff sausage into collagen casings and tie links off with twine.

Grill sausages with indirect heat (or bake in a 300ºF oven) for about 20 minutes until an internal temperature of 165ºF is reached.
