Homemade Fish Chunks

Description

These delicious chunks of tasty fish are completely homemade and can easily be adapted to be gluten-free.

Ingredients

  • 20 grams Spicy Tortilla Chips (optional)
  • 150 grams Breadcrumbs
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 1 teaspoon Paprika
  • ¼ teaspoons Cayenne Pepper
  • 350 grams Cod (or Fish Of Choice)
  • 2 whole Eggs, Beaten
  • 150 grams Flour
  • 1 Tablespoon Oil, For Frying

Preparation

Blitz the tortilla chips in a food processor and then add breadcrumbs, seasoning and spices and continue processing until everything is well-combined.

Cut up the fish fillets into medium sized chunks.

Take three bowls: in one, place the prepared breadcrumbs; in the second, beat the eggs; and in the third bowl, place the flour.

One at a time, dip the fish first in the flour, then egg mixture, and finally the breadcrumbs. Set on a plate or baking tray.

Fry in 1 tablespoon of oil until they are nice and golden. Serve immediately with a lovely salad, fries or jacket potatoes!
