Description

Our version of ginger beer isn’t a classic one: it’s not alcoholic, and it definitely doesn’t contain any yeast. So I guess ginger ‘cordial’ is a more accurate description. But hey, it’s delicious, so who cares? Ginger also works wonders for an upset stomach, so if you’re feeling a little bit sensitive in that area, I’d highly recommend a glass of this!

Ingredients

  • 1 teaspoon Lemon, Rind
  • 3 Tablespoons Lemon Juice
  • 1 cup Caster Sugar
  • 1 piece (4 Cm. Long) Ginger, Grated
  • 1 cup Water
  • Chilled Mineral Water, As Desired For Serving
  • Ice For Serving
  • Mint Leaves (optional For Garnish)

Preparation

Note the recipe requires overnight steeping, so plan ahead.

1. In a medium saucepan, bring lemon rind, lemon juice, sugar, ginger and water to the boil over a high heat, stirring occasionally. Boil for about five minutes, until the sugar has dissolved.

2. Turn off the heat and let the mixture steep in the saucepan overnight.

3. The next morning, strain the mixture into a pitcher through a muslin cloth or sieve.

4. To serve, fill a glass with some ice. Add about 1/4 cup of syrup and top with mineral water. If desired, garnish with a few mint leaves.
