Description

Homemade migas are a Texas staple!

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • 4 whole Tortillas, Cut Into Strips
  • 1 whole Bell Pepper, Died
  • 1 whole Jalapeno Pepper, Diced
  • ¼ cups Salsa
  • 4 whole Eggs
  • ¼ cups Shredded Monterey Jack Cheese

Preparation

Begin by frying the tortillas. Heat olive oil and butter in a large saucepan over medium-high heat. Add tortilla strips. Cook for 5–6 minutes until tortillas are brown and crispy. Remove from pan and allow to drain over paper towels.

Meanwhile, turn heat on pan to medium. If necessary, add additional olive oil. Add bell pepper and jalapeno to the pan and cook for a few minutes. Add salsa and cook until heated through.

While peppers are cooking, beat eggs in a small bowl. Once peppers have cooked, add eggs to the sauce pan. Scramble eggs with the peppers by gently pushing them around the pan until cooked.

Once the eggs have cooked through, add cheese and crumble the tortillas strips into the eggs. Serve immediately with desired garnishes.
