Description
Hominy gives this casserole a great texture and flavor.
Ingredients
- 28 ounces, weight Can Hominy, Drained And Rinsed
- ½ cups Leeks, Thinly Sliced
- 3 cloves Garlic, Minced
- 3 cups Milk
- 5 whole Eggs
- ½ teaspoons Hot Sauce
- ¼ teaspoons Salt
- ¼ teaspoons Pepper
- 1 dash Cayenne Pepper
- 1-½ cup Cheddar Cheese, Shredded
Preparation
Preheat oven to 350 F. Spray an 8×8 baking dish with cooking spray and set aside.
In a blender or food processor, blend hominy for about 1 minute, or until ground. It should not be completely smooth but should have the consistency of grits.
Combine the hominy and all remaining ingredients (except 1/2 cup of the cheese) in a large bowl and mix well, until everything is completely combined. Pour into the prepared baking dish. Top with remaining 1/2 cup cheese.
Bake for 1 hour, or until set and browning at the edges. Allow to sit for about 5 minutes before cutting into slices and serving.
