Honey BBQ Turkey Spinach Meatballs

Description

This dish comes in at 359 calories, which is on the higher end of the calorie spectrum for this site, but believe me, it’s well worth it. The reason it’s a little on the higher side is because of the amount of BBQ sauce used. In the recipe I gave you the ingredients for my honey BBQ sauce, but you can use a pre-made one if you wish. Just remember that many pre-made sauces contain more preservatives.

Ingredients

  • FOR THE BBQ SAUCE:
  • ½ cups Sweet Yellow Onion
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 cup Ketchup
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Rice Vinegar
  • ½ cups Chicken Broth, Low-Sodium
  • 1 teaspoon Chili Powder
  • 2 Tablespoons Honey
  • FOR THE MEATBALLS:
  • 1 pound Ground Turkey Breast
  • ¾ cups Spinach, Finely Chopped
  • 1 teaspoon Worcestershire Sauce
  • 1  Egg White
  • 1 teaspoon Spicy Mustard
  • 1 teaspoon Garlic Salt

Preparation

For the sauce:
Saute onion and garlic in olive oil in a medium saucepan over medium to medium low heat until golden brown. Add remaining BBQ sauce ingredients and mix well. Lower the heat to low and let simmer.

For the meatballs:
Combine all meatball ingredients plus 2 tablespoons of the BBQ sauce and mix well. The best mixing tool for this is your hands. Form 16 little meatballs.

Pour 3/4 of the sauce into a slow cooker and spread out along the whole bottom. Add the formed meatballs. Pour remaining sauce on top.

Cook on high for 4 hours. Serve over rice.
