Description

Is your belly growling at you? Longing for a hearty meal? Well, now you can finally provide it with something that will cure the hunger pang and make it smile! This sandwich has a flavor-packed mustard seed, fennel, and sage pork sausage patty, atop a mountain of egg, cheese, spinach, tomato and avocado.

Ingredients

  • 2 Tablespoons Olive Oil, Divided
  • ½ cups Onion, finely chopped
  • 1 clove Garlic, Minced
  • 1 Tablespoon Whole Fennel Seed
  • 1 Tablespoon Whole Grain Mustard
  • 1 Tablespoon Fresh Sage, Finely Chopped
  • ½ pounds Ground Pork
  • 4 slices Spicy Pepper Jack Cheese
  • 4 whole Eggs
  • 1 bunch (or A Handful) Of Spinach Leaves
  • 4 slices Wheat Sourdough Bread
  • 4 slices Tomato
  • 8 slices Avocado
  • Salt And Pepper, to taste

Preparation

1. Heat olive oil in a medium saute pan or griddle. Add the onions and cook until soft. Toss in the garlic and fennel – we added some red pepper flakes too — and cook for about another minute. Remove from the heat, stir in the mustard and sage, and let it cool off for a few minutes (you don’t want it to start cooking the pork). Place the pork in a bowl, add the onion mixture, and gently toss to combine. Season with a dash of salt and pepper.

2. Heat some oil in a large nonstick skillet. Form the sausage mixture into 4 equal size patties. Cook on both sides until golden brown, about 4 minutes per side. Throw the cheese of your choice on top and let it melt.

3. Cook your eggs according to your preference and saute the spinach in the same pan until wilted, and slice your avocado and tomato. Stack it all up on a piece of bread, as you wish, and enjoy!
