Description

This dish is a fun and tasty twist on regular tacos. Easy to make, healthy, and bursting with flavor! And no one would guess that there’s quinoa hidden in there! Superfood boost for the win!

Ingredients

  • 1 cup Water
  • ½ cups Dry White Quinoa
  • 2 Tablespoons Vegetable Oil
  • 1 pound 90 Percent Lean Ground Beef
  • 1 whole Medium Yellow Onion, Diced
  • 1 Tablespoon Salt
  • 1 Tablespoon Powdered Ginger
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Cumin Powder
  • 1 Tablespoon Ground Coriander
  • 1 Tablespoon Garam Masala
  • 1 teaspoon Black Pepper
  • 1 teaspoon Turmeric
  • ¼ teaspoons Cinnamon
  • 1 pinch Cayenne, More To Taste
  • 1 can (14 1/2 Oz. Size) Petite Diced Tomatoes, Undrained
  • 1 cup Peas
  • Avocado, Tomatoes, Sour Cream For Topping (optional)

Preparation

Add water and quinoa to a small pot. Cover and bring to a simmer. Turn heat to low and simmer 12–15 minutes until cooked through.

In a separate larger pot, heat oil over medium high heat. Add beef and onions. Cook 2–3 minutes until beef is starting to brown. It doesn’t need to be cooked through.

While quinoa and beef are cooking, measure out salt and spices. Add spices and canned tomatoes to the beef and onions. Simmer 3–5 minutes.

Add cooked quinoa and peas. Let cook 1 minute until peas are warmed.

Serve over white rice, with fresh naan, or with tortillas.
