Ingredients

  • FOR THE CHICKEN:
  • 6  Chicken Thighs
  • 1 teaspoon Lemon Juice
  • 2 teaspoons Salt
  • ½ teaspoons Black Pepper
  • 2 teaspoons Chicken Seasoning
  • 2 teaspoons Brown Sugar
  • ⅓ cups Cooking Oil
  • FOR THE SAUCE:
  • 1 teaspoon Salt
  • 2 teaspoons Soy Sauce
  • 1  Tomato, Finely Chopped
  • 3 cloves Garlic, Minced
  • 2 stalks Scallion, Chopped
  • 1  Onion, Chopped
  • ½  Green Bell Pepper, Chopped
  • 2 sprigs Thyme
  • 1 teaspoon Tomato Ketchup
  • 1 pinch Brown Sugar
  • 1 teaspoon Browning Sauce (optional)
  • 2 cups Hot Water

Preparation

Wash the chicken with lemon water and drain. Season with salt, pepper, chicken seasoning, and sugar. Let sit for a minimum of 1 hour in a fridge (overnight is even better).

Heat the vegetable oil in a frying pan. Cook the chicken until golden, about 4–5 minutes per side. Remove the chicken and half of the oil from the pan.

Add all the sauce ingredients, using only half of the water, to the pan. Stir, and bring to a boil. Add the chicken and the remaining hot water. Lower the heat, cover, and cook for about 30 minutes, or until the chicken is tender.

Remove the thyme and serve.
