Description

This Jamaican Sweet Potato Pudding or Pone is sweet, with a notes of cinnamon, nutmeg and vanilla! It’s vegan!

Ingredients

  • 2 pounds Sweet Potatoes, Peeled
  • 1 cup All-purpose Flour
  • 1 teaspoon Ground Mixed Spice Or Pumpkin Pie Spice
  • 1 teaspoon Ground Nutmeg
  • 1 teaspoon Salt
  • 1 cup Brown Sugar
  • 1-½ cup Raisins
  • 1 can (13 1/2 Oz. Size) Coconut Milk
  • 2 teaspoons Vanilla Extract

Preparation

Preheat oven to 350°F. Grate sweet potatoes either using a box grater on a finest setting or a food processor.

Put flour, ground mixed spice or pumpkin pie spice, nutmeg and salt into a bowl and mix. Stir in grated sweet potatoes. Add the rest of the ingredients and mix everything well.

Grease a 8-inch cake pan and pour the mixture into it. Bake for 40–60 minutes or until it is firm to the touch. Remove from the oven and allow to stand for at least 30 minutes before serving.
