Description

Japanese cucumber salad is an easy, quick and refreshing appetizer or side dish!

Ingredients

  • 3 whole Cucumbers
  • 1 Tablespoon Salt
  • 2 Tablespoons Sugar
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons Rice Wine Vinegar
  • 1 Tablespoon White Sesame Seeds

Preparation

With a mandoline slice set to 1/8 of an inch, slice each cucumber evenly. Place the cucumber in a bowl and season with salt. Remove excess moisture from the cucumbers by patting the slices dry with paper towels or a tea towel.

To make the dressing, whisk sugar, soy sauce and rice vinegar in a small bowl. Pour the dressing over the cucumbers and gently mix to combine. Garnish with sesame seeds and serve.
