Description
Jicama hash browns with sweet onions and garlic, topped with a sunny side-up egg.
Ingredients
- 1 whole Jicama
- ½ whole Sweet Onion
- 2 cloves Garlic
- 2 whole Eggs, Beaten
- Eggs, For Frying And Serving, If Desired
Preparation
Peel and grate the jicama and place in a medium sized bowl. Chop the sweet onion. Mince the garlic cloves. Combine the onions, garlic, eggs and jicama in a bowl and mix together.
Scoop a portion of the mixture with your hand and flatten with your hand. You will want to squeeze the water out as much as possible.
Heat a skillet over medium-high heat. Place patties in the pan and let them cook on each side for 3-5 minutes or until you see a golden crust form. Remove cooked patties to a plate. Repeat process until you have the desired number of hash browns.
To add an extra kick in flavor, cook a sunny side-up egg and place on top of hash browns.
