Joan’s Breakfast Oatmeal Cookies

Description

Delicious, nutritious quick on-the-run breakfast. I put one large cookie each into sandwich bags and freeze. They heat up quickly in the microwave and have that with my morning coffee before I head for the pool.

Ingredients

  • 2-½ cups Uncooked Oatmeal
  • ½ cups Whole Wheat Flour
  • 1 cup Dried Instant Milk
  • 1 cup Applesauce
  • 3 teaspoons Cinnamon
  • 3 teaspoons Baking Powder
  • ½ cups Sugar Or Sugar Substitute (Splenda)
  • 2 whole Apples, Finely Diced
  • 1 cup Egg (or Egg Substitute)
  • ½ cups Dried Cranberries Or Raisins
  • ½ cups Walnuts, Chopped (optional)

Preparation

Place all ingredients in a big bowl and mix together. I use an ice cream scoop to divide into eight or more cookies on a sprayed cookie sheet or one with a Silpat pad.

Bake at 350ºF for 15 minutes or until firm.

If you make this with sugar substitute, these are approximately 255 calories per cookie or 4 points.
