Missed Cinco de Mayo? No problem this guacamole is good any time. Easy to make … but you have to be a little patient and wait 4 hours.
Ingredients
- 1 whole Large Tomato, Finely Chopped And De-seeded
- 1 whole Medium Red Onion, Finely Chopped
- 1 whole Jalapeno, Finely Chopped, De-seeded If You Don’t Like It Too Hot
- 1 whole Lime
- ⅓ cups Cilantro, Chopped — More If Needed
- ⅛ cups Tequila
- 4 whole Avocados
- 1 teaspoon Chipotle Seasoning– More If Needed
- Salt And Pepper, to taste
- For Serving: Corn Chips, Spicy Blue Are Nice
Preparation
Remove and discard the tomato seeds and chop the remaining tomatoe into small pieces.
Mix onion, jalapeno, half of a lime (juiced), tomato and cilantro into a large bowl.
Add tequila. Now for the important part. Cover the bowl and marinate at room temperature for 4 hours.
Prior to serving, peel and pit the avocados and add them to the bowl and gently mash with a fork.
Season with salt, pepper and a “shake” of chipotle seasoning. Squeeze the remaining half a lime over mixture. Stir and adjust seasonings to taste.
Spoon into a nice bowl and serve with chips.
