Description
Crispy pizza topped with homemade caesar sauce, sauteed kale, fresh tomatoes, Parmesan and fresh burrata.
Ingredients
- 1 whole Pizza Dough
- 3 cups Kale
- 1 Tablespoon Olive Oil
- ½ cups Casear Dressing (see Below)
- ½ cups Parmesan Cheese
- 8 ounces, fluid Fresh Burrata
- 1 cup Chopped Or Sliced Fresh Tomatoes
- Fresh Sprouts, For Garnish (optional)
- FOR THE DRESSING:
- 1 whole Lemon Zest
- ½ whole Lemon Juice
- 2 Tablespoons Chopped Capers
- 1 teaspoon Worcestershire Sauce
- 4 Tablespoons Chopped Garlic
- ⅓ cups Mayonnaise
- 1 dash Olive Oil
- Salt And Pepper, to taste
Preparation
First, make the dough. You can use any kind you like but I love this one because you cannot mess it up and it gives you pizza in about 2 hours from start to finish.
While dough is rising, make the dressing. Mix together all dressing ingredients and taste along the way. I suggest going a little heavier on the pepper.
Saute kale in a little olive oil and salt just enough to soften it.
Once dough is 30 minutes away from being ready to cook, preheat oven to 450ºF. You want it nice and hot before your pizza goes in.
I like to par-bake this specific dough. This just means that you roll out your dough, get it on your pan and bake it for about 5 minutes to get it real crunchy on the bottom and the top just starts to brown.
Take the crust out of the oven, spread dressing on top. Cover with sautéed kale. Sprinkle on half the Parmesan and put it back in the oven for about another 10 minutes. Just keep an eye on the outside of the dough so it doesn’t get too dark.
Pull this beauty out of the oven. Break up burrata balls and lay them on the pizza. They’ll start to get all gooey once they hit the hot pie.
Sprinkle tomatoes and sprouts on (if using) and remaining Parmesan. Feel good about this eating pizza because it’s actually a salad!
