Description
The easiest and best customizable egg casserole for feeding your whole family! The name comes from the way a little kid would try to pronounce “quiche.”
Ingredients
- 9 whole Eggs
- 2 cups Cottage Cheese (recommend Small Curd)
- ½ cups Milk
- 1 cup Shredded Cheddar Cheese (or Substitute Your Favorite Shredded Cheese), Divided
- ⅓ cups Bisquick
- 1 can (4 Oz. Can) Diced Green Chiles
- 12 ounces, weight Precooked Turkey Sausage Links, Sliced
- 2 whole Green Onions, Green And White Parts, Sliced (or 2 Tablespoons Chives, Chopped)
- 2 cups Uncooked Refrigerated Or Frozen Shredded Hash Brown Potatoes (optional)
- Salt And Pepper
Preparation
Preheat oven to 350 degrees. Grease a 9 x 13″ casserole dish.
In a large bowl, whisk together the eggs to break up the yolks. Add cottage cheese, milk, half a cup of shredded cheese, and Bisquick. Mix thoroughly. This is the base and can be customized with your favorite ingredients from this point.
Place the chiles, meat, and shredded potatoes into the bowl and mix well. Sprinkle generously with salt and pepper.
Pour mixture into the prepared casserole dish. Top with the remaining shredded cheese. Bake for 45 – 60 minutes, or until a knife inserted into the center comes out clean. Let stand for 5 minutes before serving.
Note: My favorite combo includes the chiles, turkey sausage, and hash brown potatoes. If you prefer bacon or ham, use that instead. Up to two cups of shredded potatoes or vegetables cut into bite-sized pieces can also be added. If you are not using the chiles, I recommend seasoning the mix with a couple teaspoons of smoked paprika or seasoned salt.
