Description

Lantern Tray bake was a recipe given to me by a friend’s mum. I needed a no-bake recipe to enter into the local agricultural show and she recommended this. It got highly commended, not bad for my first attempt! However I have no idea why it’s called Lantern Tray Bake!

Ingredients

  • 6 ounces, weight Butter
  • 18 ounces, weight Chocolate, Divided
  • 16 ounces, weight Digestive Biscuits
  • 8 ounces, weight Raisins
  • 4 ounces, weight Glace Cherries, Chopped
  • 7 ounces, weight Condensed Milk

Preparation

Melt butter in a pan along with 8 ounces of chocolate. Place digestives in a resealable bag and bash with a rolling pin until there is a mixture of small and big crumbs. Add crushed digestives to melted chocolate.

Add raisins and chopped cherries to the mixture, followed by condensed milk. Mix until all the ingredients are thoroughly combined.

Press mixture into a tin. I use a 13 x 9 x 1 nonstick baking tin. Melt remaining 10 ounces chocolate and pour over the mixture in teh tin, making sure everything is completely covered. You can use less or more chocolate depending on the depth of your tin and how much you love chocolate.

Refrigerate overnight. Remove and cut into squares. I tend to prefer smaller pieces as it is quite sweet.
