Description
Fancy-looking but easy to make. Leek, pears, prosciutto and goat cheese are a match made in food heaven.
Ingredients
- 1 Tablespoon Butter
- 4 whole Leeks, White And Light Green Parks Only, Sliced
- 2 teaspoons White Granulated Sugar
- 1 whole Pear, Chopped
- 1 Tablespoon Grainy Dijon Mustard
- 3 teaspoons Apple Cider Vinegar
- 6 slices Sourdough Bread, Toasted
- 6 Tablespoons Goat Cheese
- 6 slices Prosciutto
- 2 sprigs Fresh Thyme
Preparation
On medium heat, melt butter and add leeks. Cook for a few minutes until they begin to turn translucent and soft. Add sugar, then the pear. Raise heat and cook until mixture is soft, mash-able and light golden brown.
Add mustard and vinegar, stir and let bubble for few minutes until liquid has cooked off. Set aside to cool.
Lay bread out. Spread a bit of goat cheese on each slice, then the pear/leek mixture, then top each with prosciutto and a few flecks of fresh thyme. Serve and enjoy!
