Fun dish for two to prepare and even more fun to eat!
Ingredients
- ½ teaspoons Salt (for Boiling Pasta)
- 4 whole Lasagna Noodles
- 4 ounces, weight Cream Cheese, Softened
- 2 teaspoons Dill
- 1 teaspoon Black Pepper
- 1 whole Lemon (Washed, Zest &Juiced)
- ½ cups Low Sodium Vegetable Stock
- ¼ cups Light Cream
- ½ cups Freshly Grated Parmesan Cheese
Preparation
Preheat oven to 400°F.
To a pot of boiling water, add salt and lasagna noodles (cook per package instructions), drain and lay flat on a clean work surface.
In a mixing bowl add softened cream cheese, dill, pepper, lemon juice and zest and stir well with a sturdy spatula to combine.
In a small oval or square baking dish, add vegetable stock and cream and stir well to mix. Set aside.
Add cream cheese mixture to the center of each lasagna noodle using a small spatula, roll each one up into a roll and place seam side down into the baking dish. Cover with aluminum foil and place on the middle rack in the oven. Bake 10 minutes. Then remove foil the last 5 minutes of bake time.
Garnish with freshly grated parmesan cheese. Serve with a side salad, crusty bread and enjoy!
