Description
A simple, delicious and healthy dinner of fish and veggies in a foil packet. Plus, easy clean up!
Ingredients
- 2 Tablespoons Lemon Juice
- 1 Tablespoon Olive Oil
- 1 teaspoon Thyme, Fresh Or Dry
- 2 whole (4 Oz. Size) Salmon Fillets
- 1 cup Dry Quinoa, Cooked According To Package Instructions
- ½ whole Lemon, Sliced Thin
- 2 cups Zucchini, Sliced 1/2 Inch Thick
- Salt And Pepper
Preparation
Preheat oven to 400 F. Tear off two pieces of foil, about ten inches long.
In a small bowl, whisk together lemon juice, olive oil and thyme.
In the center of each piece of foil place a salmon fillet and sprinkle with salt and pepper. Add half of the cooked quinoa around each fillet and pour lemon mixture on top. Top with slices of lemon and zucchini.
To seal the packets, bring two sides of foil together and roll down. Then tuck in the sides so the packet is totally sealed together.
Place both packets on a rimmed baking sheet and bake for 30 minutes, or until fish is cooked through and flaky. Enjoy!
