Description
Healthier nachos made with the super-grain quinoa, and just a little chicken for meat lovers. Topped with loads of veggies, and, of course, some cheese.
Ingredients
- 3 cups Cooked Quinoa
- 1-½ cup Cooked, Shredded Chicken (seasoned With Taco Seasoning Or Your Favorite Seasoning)
- 1 cup Black Beans
- 1 cup Cooked Corn
- 1 cup Shredded Lettuce
- 1 cup Sliced Cherry Or Grape Tomatoes
- ¼ cups Chopped Red Onion
- 1 Small Avocado, Chopped
- 2 Tablespoons Chopped Cilantro
- Tortilla Chips For Serving
- 1 cup Shredded Cheese (I Use A Mexican Cheese Blend)
- 1 Lime, Cut In Wedges
- Sour Cream, Salsa, Jalapeños For Topping
Preparation
On a large serving plate or platter, layer ingredients in order given, beginning with quinoa, then chicken, beans, corn, lettuce, tomatoes, onions, avocado, and cilantro.
Arrange tortilla chips around the outside of the platter. (You will probably need a bowl for additional chips.) Sprinkle cheese over everything on the platter and either warm in the microwave or oven (be sure your platter is oven-proof) until cheese melts.
Serve with lime wedges, sour cream, salsa, and jalapeños.
