Description
This recipe only looks hard to make! Delicious and filling, this loaded sweet potato with cool cilantro lime sauce is a new favorite.
Ingredients
- FOR THE CILANTRO-LIME SAUCE:
- ¼ cups Sour Cream
- ½ cups Cilantro
- 2 Tablespoons Olive Oil
- FOR THE LOADED SWEET POTATO:
- 1 whole Sweet Potato, Baked Or Unbaked
- Olive Oil, As Needed
- 1 bunch Kale
- ¼ cups Shredded Chicken
- ½ Avocado, Sliced
- 2 teaspoons Sliced Hot Peppers
- 1 Tablespoon Pumpkin Seeds
Preparation
Place sour cream, cilantro and olive oil in a food processor and blend until smooth. Place in the fridge until ready to use.
If sweet potato is already baked, wrap it in tin foil and heat in the oven at 325ºF just until warmed through. If sweet potato is raw, place on a baking sheet in the oven at 400ºF and bake 60 minutes or until tender.
When sweet potato is almost done baking, heat olive oil in a skillet over medium heat. Add kale and saute for a few minutes on one side, then toss and saute for another couple minutes until you see some browned crispy sides. Remove from heat. Cooking kale this way keeps it bright green with some crunch. (Nobody likes brownish soggy kale.)
Stuff sweet potato with kale, shredded chicken, avocado slices, hot peppers and cilantro lime sauce. Sprinkle pumpkin seeds, serve and enjoy!
