This is an excellent Keto friendly (low-carb) option.
Ingredients
- 1 Tablespoon Olive Oil
- 1 Red Onion, Chopped
- 4 cloves Garlic, Minced
- 1-½ teaspoon Dried Oregano
- 1-½ teaspoon Dried Chili Powder
- Kosher Salt And Freshly Ground Pepper
- 1 pound Ground Chicken
- ½ cups Tomato Sauce (sugar Free)
- 4 Bell Peppers, Cut In Half Lengthwise And Seeded
- ½ cups Shredded Monterey Jack Cheese
Preparation
Preheat oven to 400ºF.
Heat olive oil in a skillet or saute pan. Add onion, garlic, oregano, chili powder, kosher salt, and freshly ground pepper. Let it cook for about 2 to 3 minutes or until fragrant.
Add ground chicken and tomato sauce. Adjust seasoning.
Stuff each bell pepper with about 1/4 cup ground chicken and finish with cheese. Place peppers in a sheet pan, and cook in the oven for about 30 minutes.
