A paleo, keto and whole30-friendly weeknight dinner with only 3 ingredients! So easy and yummy!
Ingredients
- ½ cups Roasted Macadamia Nuts
- 2 Fillets Mahi Mahi
- ½ Tablespoons Coconut Oil
- Sea Salt
- Fresh Cilantro For Garnish
Preparation
Preheat oven to 450ºF and line a baking sheet with parchment paper.
In a food processor, crush macadamia nuts until they form small crumbs. This will just take a few seconds—don’t over-process or you will have macadamia nut butter. Spread crumbs onto a plate.
Brush mahi mahi fillets with melted coconut oil and press the top of each into the macadamia crumbs. Really make sure to press the crumbs in, so they stick to the fish. Season with salt.
Place fillets in the baking dish, nut side up, and bake for 7–9 minutes, or until fish is white and flaky.
Turn oven to high broil and broil for 1–3 minutes, until nuts have gone golden and toasty. Garnish with cilantro and devour!
