Description
Apple Raisin Oatmeal is the perfect power breakfast for busy mornings. Simply make a batch at the beginning of the week and enjoy warm, sweet and satisfying breakfasts all week long!
Ingredients
- 3 whole Apples
- 4 cups Unsweetened Almond Milk
- ½ teaspoons Salt
- 2 cups Old Fashioned Rolled Oats
- 1 cup Raisins
- ¼ cups Brown Sugar
- 2 teaspoons Vanilla Extract
Preparation
Cut the apples into small 1/2-inch cubes. Make sure to remove the seeds! Set aside.
Over medium heat, in a large sauce pan, heat almond milk and salt until almond milk is steaming (but not boiling!). Then add oats. Cook over medium heat until oats have absorbed all the almond milk, stirring occasionally. This can take anywhere from 5–12 minutes depending on the size and temperature of your pan.
Reduce the heat to low. Add cubed apples, raisins, brown sugar and vanilla extract and stir to combine. Cook for 1–2 minutes over low heat. Serve immediately or refrigerate for future use.
Note: When reheating the oatmeal, add 1-2 tablespoons of water or almond milk to the oatmeal, Microwave for 1 minute, stir and enjoy!
