Description
Who wants to stand over a blender to make frozen drinks during a party? Answer, no one! These are made ahead and put in the freezer. When it is time to enjoy, simply take them out and slushy cocktails are served!
Ingredients
- FOR THE PINA COLADA:
- 8 cups Ice
- 1 cup Pineapple Juice
- 2 Tablespoons Cream Of Coconut
- 1 cup Canned Pineapple, Drained
- 1 cup Coconut Milk
- 5 ounces, fluid Coconut Rum
- 7 jars Mason Jars, 14-ounce Size
- FOR THE STRAWBERRY DAIQUIRI:
- 8 cups Ice
- 1-½ cup Frozen Strawberries
- 1-½ cup Strawberry Daiquiri Mix
- 5 ounces, fluid White Rum
Preparation
For the pina colada:
Place the ice, pineapple juice, cream of coconut, pineapple, coconut milk and coconut rum in the blender and blend until smooth. If you are making a virgin pina colada, leave out the coconut rum and add additional pineapple juice. Fill Mason jars up half way up with the pina colada mixture. Set aside for now.
For the strawberry Daiquiri:
Place the ice, frozen strawberries, strawberry daiquiri mix and rum into the blender and blend until smooth. If you are making a virgin daiquiri, leave out the rum and add additional daiquiri mix.
Pour the strawberry daiquiri on top of the pina colada to fill the Mason jars and use a spoon to push the daiquiri into the pina colada to create the “lava flow” effect.
Place in the freezer and take out when you want to enjoy.
Note: I use 14-ounce Mason jars and the recipe makes 7 frozen cocktails perfectly.
Disclaimer: The boozy versions stay slushy because they have alcohol in them. If you do not use the booze, they won’t have the same slushy consistency but they will still taste delish.
