Description
A simple granola recipe that is gluten-free, low glycemic, and just flat out delicious!
Ingredients
- 1-½ cup Rolled Oats
- ¼ cups Cashew Pieces
- 1 Tablespoon Chia Seeds
- ¼ teaspoons Cinnamon
- 1 pinch Salt
- 2 Tablespoons Melted Coconut Oil
- ¼ cups Cashew Butter
- 2 Tablespoons Maple Syrup
- 1 whole Egg White
- ¼ cups Dark Chocolate Chips
Preparation
Preheat oven to 350ºF and line a baking sheet with parchment paper.
Place all dry ingredients (except chocolate chips) in a large bowl.
In a small bowl, melt coconut oil and cashew butter together. Mix in maple syrup. Pour the wet into the dry and mix until well combined. Crack in the egg white and mix until well combined.
Place on the baking sheet in one layer and bake for 15 minutes. After 15 minutes, stir the granola and break up any large clusters. Bake for another 10–15 minutes until golden brown.
Let cool for 10–15 minutes before adding dark chocolate chips. Store in a Mason jar.
