Ingredients
- 2 whole Salmon Fillets
- 1 cup Fresh Cranberries
- FOR THE SAUCE:
- 1 Tablespoon Olive Oil
- 1 Tablespoon Maple Syrup
- 1 Tablespoon Soy, Reduced Sodium
- 1 teaspoon Dijon Mustard
- 1 Tablespoon Chili Pepper
- 1 pinch Black Pepper
Preparation
Preheat oven to 400ºF. Place a sheet of parchment paper on a baking sheet.
In a small glass bowl, whisk the sauce ingredients to combine. Pour over the salmon fillets equally. Add the fresh cranberries.
Bake for 20 minutes then broil for up to 5 minutes or until golden brown.
